An excellent article about Vanilla and its production was published in the latest edition of the ISHS publication Chronica Horticulturae and you can download a copy from here: http://www.ishs.org/chronica/
'Bourbon Vanilla: Natural Flavour with a Future' R. Kahane, P. Besse, M. Grisoni, F. Le Bellec and E. Odoux
Vol. 48- #2- p23-29; Chronica Horticulturae, International Society for Horticultural Science
The article taught me that Vanilla needs a 45-60 day water-stress period to kick it into flowering - there's always more to learn!
Enjoy,
